C\u2019est la technique id\u00e9ale pour booster sa sant\u00e9 (probiotiques) tout en conservant ses r\u00e9coltes. La lacto-fermentation est align\u00e9e avec l&rsquo;esprit \u00ab\u00a0sol vivant\u00a0\u00bb et \u00ab\u00a0manger sain\u00a0\u00bb de Jarforetum, car elle conserve la totalit\u00e9 des vitamines des l\u00e9gumes sans cuisson.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">1. Le choix du mat\u00e9riel<\/h3>\n\n\n\n<p>Contrairement \u00e0 la st\u00e9rilisation, ici, pas besoin de chaleur :<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Bocaux :<\/strong>&nbsp;Utilisez des bocaux en verre \u00e0 joint de caoutchouc (type Le Parfait) pour laisser s&rsquo;\u00e9chapper le gaz tout en restant herm\u00e9tiques.<\/li>\n\n\n\n<li><strong>Hygi\u00e8ne :<\/strong>\u00a0Inutile de st\u00e9riliser les bocaux \u00e0 150\u00b0C, un nettoyage tr\u00e8s propre \u00e0 l&rsquo;eau chaude et au savon, puis bien s\u00e9ch\u00e9s \u00e0 l&rsquo;air, suffit, car les \u00ab\u00a0bonnes\u00a0\u00bb bact\u00e9ries vont dominer le milieu.<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">2. Pr\u00e9paration et d\u00e9coupe<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Qualit\u00e9 :<\/strong>\u00a0Utilisez des l\u00e9gumes sauvages ou bio et ultra-frais (id\u00e9alement cueillis le jour m\u00eame pour conserver un maximum de vitamines).<\/li>\n\n\n\n<li><strong>D\u00e9coupe :<\/strong>&nbsp;R\u00e2pez, coupez en rondelles ou en b\u00e2tonnets. Plus le l\u00e9gume est coup\u00e9 finement, plus la fermentation est rapide.<\/li>\n\n\n\n<li><strong>Sel :<\/strong>&nbsp;Utilisez du sel marin pur (non trait\u00e9, sans fluor ni iode), car les additifs peuvent bloquer le processus.<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">3. La mise en bocal (Le principe de l&rsquo;ana\u00e9robie)<\/h3>\n\n\n\n<p>Il existe deux m\u00e9thodes principales :<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Au sel pur (ex: Choucroute) pour les l\u00e9gumes r\u00e2p\u00e9s ou coup\u00e9s tr\u00e8s finement :<\/strong>\u00a0On m\u00e9lange les l\u00e9gumes avec environ 1% de leur poids en sel. On presse fortement pour faire d\u00e9gorger le jus.<\/li>\n\n\n\n<li><strong>En saumure (ex: Cornichons) <strong>pour les l\u00e9gumes entiers ou coup\u00e9s en plus gros morceaux<\/strong> :<\/strong>\u00a0On pr\u00e9pare un m\u00e9lange d&rsquo;eau (non chlor\u00e9e) et de sel (environ 30g de sel par litre d&rsquo;eau) que l&rsquo;on fait bouillir. Une fois refroidie, on verse sur les l\u00e9gumes.<\/li>\n\n\n\n<li><strong>R\u00e8gle d&rsquo;or :<\/strong>\u00a0Les l\u00e9gumes doivent \u00eatre\u00a0<strong>totalement immerg\u00e9s<\/strong>. Tout l\u00e9gume en contact avec l&rsquo;air risque de moisir. Il faut donc veiller pour les l\u00e9gumes coup\u00e9s finement \u00e0 les tasser au fur et \u00e0 mesure dans le bocal pour ne pas emprisonner de l&rsquo;air.<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">4. Le processus de fermentation<\/h3>\n\n\n\n<p>C&rsquo;est ici que la magie op\u00e8re, en deux phases :<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Phase active (Pr\u00e9-fermentation) :<\/strong>\u00a0Laissez les bocaux \u00e0 temp\u00e9rature ambiante (20-22\u00b0C) pendant\u00a0<strong>3 \u00e0 7 jours<\/strong> \u00e0 l&rsquo;abri des rayons directs du soleil. Le bocal peut \u00ab\u00a0psshitter\u00a0\u00bb ou d\u00e9border un peu, c&rsquo;est normal, c&rsquo;est le signe que les bact\u00e9ries travaillent.<\/li>\n\n\n\n<li><strong>Phase d&rsquo;acidification :<\/strong>\u00a0D\u00e9placez les bocaux dans un endroit plus frais (15-18\u00b0C ou cave) \u00e0 l&rsquo;abri de la lumi\u00e8re pour au moins\u00a0<strong>3 semaines<\/strong>\u00a0avant de consommer.<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">5. Consommation et Conservation<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Dur\u00e9e :<\/strong>&nbsp;Les bocaux se gardent un an ou plus dans un endroit frais et sombre.<\/li>\n\n\n\n<li><strong>V\u00e9rification :<\/strong>&nbsp;\u00c0 l&rsquo;ouverture, une bonne odeur de cornichon ou de vinaigre est signe de r\u00e9ussite.
